
2007 Vintage Pot & Column Still Rum
This comes from Australia’s oldest licensed rum distillery, on the Queensland coast. A first column distillation is followed by distillation in a copper pot still. After 10 years in American oak in Australia, The Elixir Trails aged it a further seven in second-fill bourbon casks in the UK.

“This is a spirit that confounds expectations of how good Australian rum can be. Its artisan approach shows in the flavour. Long fermentation, with a proprietary yeast strain, amps up ripe banana and other fruit notes, while running it through the pot still after the column gives an oily mouthfeel, with eucalyptus, mint, blackberry jam and sultanas.”
Tasting Notes
Nose
I get banana – and unmistakable diesel fuel - with raisins and currants.
Palate
It’s very dense with a rich, oily texture. Loads of boozy sultanas and baked, overripe bananas. Condensed milk with dried mango and dried mint.
Finish
It dries off on the tongue with mint, tarragon, and sunbaked tropical fruit.
