In international terms, the Land Down Under is best known in the 21st century for its wines – from high-quality South Australian Shiraz to plonk people pick up on the way to a party – following its late-20th-century reputation as the land of lager. But it was actually rum that was colonial Australia’s first drink of choice – because of the British naval influence. So much so that the spirit became a de facto currency in the late 18th century. For most of the 19th century, rum was imported or illegally distilled, until the first licence was granted – to Beenleigh Rum – in 1884.
