
Fiji
The Fijian sugar cane industry has existed since the mid-19th century and the local varietal of the cane is renowned for its flavour, largely due to the volcanic soil it grows in. Dried cane became the usual roofing material for traditional Fijian houses. Yet there was no commercial rum distillery in the archipelago until 1979. Locally, kava (a drink made from a psychoactive plant) was part of the culture, as opposed to alcohol. But, given the quality of the local resource, Fijian rums are increasingly worth exploring.

2014 Vintage Column Still Rum
Made with molasses from a local heritage cane varietal. After a year ageing in American oak on the island, the rum spent a decade in ex-bourbon casks in Scotland.
