“This shows off the huge spectrum of Jamaican rum. Instead of the strong overripe fruit flavours of famous ‘high-ester’ styles, this goes for a more complex approach. A traditional ‘double-retort’ pot still helps make it crisp and precise but with depth: banana bread with orange and spice. To highlight that complexity, we matured this without much cask influence.”
